VINIFICATION:
After careful manual harvesting of the grapes and crushing and destemming, the vinification takes place with the “cryomaceration” process: the grapes are placed in a special tank for about 12 hours at a temperature of 6-8 degrees. After soft pressing, the must is sent for fermentation at a controlled temperature.
It ages for 12 months in the bottle before being sold.
