VINIFICATION:
After careful manual harvesting, the Riesling Italico grapes undergo soft pressing and subsequently begin fermentation at a controlled temperature. In spring, a percentage of still red wine is added to the wine and, subsequently, bottling and secondary fermentation take place with the addition of yeasts.
