VINIFICATION:
After careful manual harvesting and soft pressing, the must is then fermented at a controlled temperature.
In spring, bottling and secondary fermentation take place with the addition of yeasts. After at least 30 months of permanence in the stack on these noble yeasts, disgorging and final corking take place.
The sparkling wine is then left to rest for a few months before being sold.
