VINIFICATION:
After a careful manual harvest in the last ten days of August, following the crushing and destemming, the vinification takes place with the process called “cryomaceration”: the grapes are placed in a special tank for approximately 20 hours at a temperature of 6-8 degrees. In spring, bottling and secondary fermentation take place with the addition of yeasts.
After 24 months of permanence in the stack on these noble yeasts, the disgorging and final corking take place.
The sparkling wine is then left to rest for a few months before being sold.
